Chaste Maiden Olive Oil
Our olive oil is produced from 10 different olive varieties of Italian and Spanish heritage all grown organically. We hand harvest in the late fall to early winter, usually from November to late December. The olives are picked when we feel the resulting oil will have a fruity, grassy aromatic quality with a modicum of pungency that one would find in a fine Tuscan olive oil.
It is cold-pressed here at Preston on our Rapanelli olive mill which utilizes a blade mill with centrifugal decanter and separator. Oil is then racked twice and bottled by hand, unfiltered.This is our early release olive oil, still cloudy and pungent. It is available for only a couple of months.
