2017 Vin Gris

Some roses are made using the saignee method, bleeding off juice from newly crushed red must in part to concentrate the color. Those roses tend to be a bit darker and riper. For this wine, we pick Cinsault and Mourvedre early (and only for rose) in order to retain natural acidity and produce a wine that is neither too dark nor too ripe. The grapes are lightly crushed and the juice and skins soak together for about 5 hours, just enough time to get the desired pale pink hue. The resultant pink juice was fermented in stainless steel to retain freshness. Aromatically this wine delivers notes of peach, strawberry and just a touch of orange rind. Its medium-bodied on the palate with more peach, strawberry and other red fruit flavors carrying through. The finish is crisp and refreshing.
