2020 White Wine
Our White Wine project began as an experiment last year in order to showcase some of the lesser-known white grapes in our experimental block. We were inspired to create this blend by some of our favorite savory white wines from the cooler regions of northern Italy, many of which feature traditional fermentation techniques involving the use of skin contact. Indeed, skin-fermented Sauvignon Blanc forms the core of this wine, as we experiment with different grapes and techniques to shape the surface around it.
From a notoriously warm year, the 2020 White Wine ventures a little further into the flower and fruit spectrum than its predecessor; its savoriness is merely a subtle counterpoint. Aromas of pear & lime both in fruit and blossom are primary, with background notes of linseed, vanilla flower, tomato vine and a hint of sea-spray. Ribolla Giallas signature notes of tangerine come forward in the mouth, where delightfully well-integrated tannin frames a unique citrus-pith finish. GH
Grapes are certified organic (CCOF). Fermentation is initiated spontaneously without the addition of commercial yeast or malolactic bacteria.
